I’m Such A Moron!

Happy New Year!  The dog is my multi-poo, Sam – he doesn’t have anything to do with me being a moron or this post I just think he’s really cute and I wanted to show him off!   The other little 150 x 150 image is my 5 year old wearing my glasses and teaching me how to read (for hours and hours, everday for the past 2 weeks- she’s brutal).  I CAN NOT WAIT for school to start again on Monday, WOO HOO!!  Vacation Time!!

OK – now for the moron part.  I’ve been searching recipes online, trying desperately to find a peach cobbler that tastes like the one from Hardees.  I’ve spent lots of money and made at least 15 different recipes that tasted ok, but just weren’t right.  All of a sudden I had an epiphany – Google, Hardees peach cobbler!  Guess what – all sorts of recipes for Hardees peach cobbler, DUH – so, why didn’t I think of that FIRST?!  I run out to the grocery store at 9:30 pm, because I just HAVE to try to make this now (I’m so impatient).  I end up spending $30 on everything (3 cans of peach pie filling, 4 bucks each, pie shells, $4, pans to make the cobbler cause I didn’t have the right size $10)  I think you can get this for about $5 at Hardees.  Anyway, IT WAS AWESOME – tasted exactly like Hardees Peach Cobbler – YUM YUM YUMMY!

Here is the recipe I used: (I used three cans of peach pie filling, two pie crusts and doubled the butter, sugar and cinnamon – it made 2 8 x8 dishes.

  1. Preheat oven to 375 degrees F.
  2. Spread the pie filling into a square baking pan.
  3. Put the slices of butter on top of the pie filling, placing them as evenly as possible.
  4. Carefully remove the pie crust from the pan it is in, and place it carefully on top of the pie filling and butter. You will need to cut off the edges that hang over and make them fit on the square pan.
  5. Sprinkle liberally with cinnamon and sugar. Bake for about 20 to 25 minutes, until pie crust is lightly browned.
  6. Serve with a scoop of vanilla ice cream.dsc00655-1-2second
